If you’re looking to build new skills or refine your existing techniques, one-to-one private cake tuition offers a highly personalised learning experience tailored entirely to you.
During an in-person, one day private lesson, you’ll receive Fay’s undivided attention, with expert guidance shaped around your individual goals and skill level. These bespoke cake decorating classes are designed to help you progress with confidence, whether you’re a beginner or an experienced cake maker looking to elevate your work.
From mastering the fundamentals of ganaching and covering a cake in sugarpaste, to developing advanced techniques such as sugar flower making, each session is planned collaboratively to ensure we make the most of our time together.

What a day may look like
Sugarcraft
Learn the art of sugarcraft, from forming petals to wiring, taping and dusting, to create realistic, elegant sugar flowers. You’ll arrange your finished flowers on a pre-covered cake dummy to take home.
If you’re new to sugar flowers, we’ll begin with a variety of rose designs to build strong foundational skills that translate easily to other flowers. Fay will share her professional tips, favourite flower paste and tools, how to make edible glue, and advice on assembling an essential sugar flower toolkit.
Cake basics
Perfect the core skills every cake designer needs. You’ll learn how to cut, fill, ganache and cover a cake in sugarpaste for smooth, professional results every time. Both the all-in method and paneling method will be covered.
We’ll also explore dowelling and stacking techniques. If time allows, your lesson can include stencilling, ruffles, wafer paper, or any other techniques you’d like to focus on.
You’ll also receive Fay’s classic vanilla sponge recipe, along with her buttercream and ganache recipes. We’ll prepare a batch of ganache together during the day.
